Today shiitake mushrooms are the most popular and cultured species of mushrooms in the world. They are used in dishes of many national cuisines.

Dried shiitake mushrooms are steeped in cold potable water at the rate of 30 g of mushrooms per 1 liter of water. Then they should be left for 8-10 hours at temperature of +2 to +4 degrees. The water where the mushrooms were swelling is called Shiitake-Dashi and used as broth for hot soups and other hot dishes.
