Premium sushi rice is characterized by higher degree of sticking. Sushi and rolls keep their form better when this Premium rice is used. It is possible due to well-milled rice.

To get an optimal level of rice sticking it is required to wash it as least 4-5 times. Then water is added in ratio of 1 portion of rice per 1.06-1.1 portion of water. Estimating amount of water it is important to keep in mind that rice becomes saturated of water after washing-out.
Then the rice is cooked in a rice steamer. When cooking is finished, the rice steamer is switched over to a heating mode for 25-35 minutes depending on a rice steamer model.
Thereafter the rice is put into a hangiri, a burnt part is removed, the rice is dressed with 250-300 g of sauce per this amount. The ready rice is mixed by minced movements, evenly mixing the dressing.
