Fillet is cleaned trunk of a giant squid. Nutritious dietary sea product known due to its delicate flavour and firm texture.
Squid dishes are popular all over the world:

Squid is very sensitive to heat treatment. Therefore it mustn't be cooked long, otherwise its meat will be tough and dry, loose its weight. Squid should be defrosted in cold water at temperature of +12 to +14 degrees.
Before cooking a peel must be removed from the trunk.
For cold dishes, squid should be priorly boiled: it is put into boiling water for 3-4 minutes max.
If you want to neutralize specific smell of the squid, put it into soda solution (2 tea spoons of soda per 1 liter of water) for 1-2 hours
