Rice vinegar perfectly suits to sushi. It makes rice more sticky and helps to form rice and to keep it. As opposite to apple or grape vinegar, the rice vinegar has more delicate aroma that does not replace aroma of the dish itself.

In Pan-Asian and Japanese cuisines it is used as a rice dressing and to make sauces.

To make a rice dressing 1 liter of the vinegar is heated up to temperature of 70-80 degrees. During heating 900 g of sugar must be added. After sugar is dissolved 40 g of salt and 5 g of Kombu sheet are added.
