Izumidai perch or tilapia is perch fillet without skin. It is moist and has sweetish flavour. This fish can be quickly cooked.

It is used in dishes of European and Pan-Asian cuisines:

- sushi, sashimi, rolls;

- as a main course;

- in salads;

- in soups;

- in cold appetizers;

- in hot dishes.
