Masago black caviar SP Professional is made from capelin caviar processed by a special method. The natural colour of the caviar is pale pink, but natural dyes are used to make it bright. As a result, the caviar acquires different shades: green, red, orange, black, etc. After colouring, it is marinated in soy sauce, which gives it a rich flavour.
Masago caviar has a delicate, pleasant fishy flavour and aroma.
It is used in Japanese cuisine:
- making sushi and rolls;
- decoration of dishes;
- adding to salads;
- making snacks;
- preparation of soups;
- use in sauces.

We recommend to defrost the caviar in a fridge at temperature of +2 to +4 degrees. It allows to minimize losses and the caviar will remain firm and preserves its form. Making rolls, it is better to smother them in the caviar. In this case eggs will remain sound and preserve their crunchy structure.
