Soba is noodles made of buckwheat flour. It is becoming more and more popular in Ukraine due to its unique flavour and health advantages.

In Asian cuisine:

- as a side dish;

- in wok;

- in bowls.

Features:

To preserve elasticity of the noodles, at first it should be boiled for 3-4 minutes until al dente condition. Thereafter it must be cooled immediately in ice water.
