Baby octopus is very popular product in many national cuisines. Its meat is tender and has sweetish flavour. Octopuses are low-caloric and contain many nutrients, therefore they are often used in dietary dishes.
Octopuses are popular in Mediterranean and Pan-Asian cuisines:

- salads;
- in various cold and hot appetizers;
- as a main course.

Octopuses can be defrosted in cold water at temperature of +12 to +14 degrees. To avoid bad smell they should be left in salt solution (2 tea spoons of soda per liter of cold water) for 1-2 hour. It is essential not to cook this product for a long time. Otherwise its meat will become tough and dry.
